We use a curved knife, slicing precisely to peel the bark without harming the tree. Sun-drying on bamboo racks for 3-7 days ensures it retains its potent aroma.

My tip? Plan your harvest in autumn, from August to September. That’s when the oil content is highest. Spring harvests yield a milder flavor, but both seasons have their own unique charm.

Step 4: Utilize Every Part

Nothing goes to waste here in Xuan Ai. After peeling, the trunk bark becomes cinnamon sticks, the branch bark is split for various uses, and scraps are ground into powder.
