I bend down, cutting close to the soil, and the fresh aroma of cinnamon bark fills the air. It’s not just any scent; it’s the smell of nearly 200 years of tradition. How We Nurture the Best Cinnamon

Years one to five, we plant and nurture. Watch them grow under the watchful gaze of these mountains. By year three, we begin to harvest the leaves for essential oil. In years eight to ten, the bark starts to show it’s ready. But the true magic happens around year fifteen — when the cinnamon reaches peak quality, with 3-5% oil content. A labor of love, truly.

For me, autumn (August-September) is the most rewarding time. First, the oil content of the bark is higher, lending to a richer, more intense aroma and flavor — traits of the best cinnamon. Second, the cool mountain air helps in naturally drying the bark, enhancing its quality. Third, the community comes together, a harmony of hands and hearts, working in unison.

Is Spring Cinnamon Really Milder?

Spring (February-March) brings a different harvest. The oil content is slightly less, making spring cinnamon milder. Yet, it holds a special place. Delicate and gentle, like the first breath of spring itself. It’s like choosing between a fiery sunset and a calm sunrise. Each has its charm, and both are considered the best, depending on your palate.
